Adlai Salad with Lemon Vinaigrette

Refreshing and light, this adlai salad is perfect for a quick and healthy lunch. Packed with colorful vegetables and topped with a zesty lemon vinaigrette, it’s a satisfying meal to keep you energized.

Ingredients:

  • 1 cup cooked adlai
  • Cherry tomatoes, halved
  • Cucumber, diced
  • Red bell pepper, chopped
  • Feta cheese, crumbled
  • Fresh parsley, chopped
Lemon Vinaigrette:
  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

Instructions:

  1. Cook adlai and let it cool.
  2. In a large bowl, combine cooked adlai, cherry tomatoes, cucumber, red bell pepper, feta cheese, and fresh parsley.
